Healthy Blueberry Muffins


B's mom and sister came to see us recently and brought us, among many other things, some delicious Michigan blueberries. I haven't baked anything too substantial in our new house and figured I'd give some blueberry muffins a go. I used a healthy recipe (er, as healthy as muffins can be, anyway) from Simple Daily Recipes.

You'll need:

3/4 cups low fat milk
1/2 cup natural applesauce
1 egg
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1 cup fresh blueberries
  • Preheat the oven to 400.
  • Mix the milk, applesauce, and egg in a small bowl.
  • Mix the rest of the ingredients (except for the blueberries) in a bigger bowl.
  • Make a well in the middle of the latter mixture and pour the wet ingredients into it. Mix.
  • Fold in the blueberries. I used more than a cup.
  • If you like crumbly top muffins, mix some extra sugar and flour in with some butter at room temperature and sprinkle over the top of the muffins.
  • Pour into a non stick or greased muffin pan and bake for 20 minutes.

I won't be posting a ton of prep pictures these days due to my compromised workspace and lack of camera charger. The muffins are super tasty (though you can tell they are healthy - applesauce just doesn't taste the same as crisco or canola oil!) and the recipe is very easily. You should give it a go, too.

    P.S.-- muffins are great for freezing and popping in the microwave for a quick snack post baby. And bran muffins will... ummmm... give you a little help right after baby, if you catch my drift. ;)
